    onion, finely sliced

  • 400 g

    (14oz) pack sausagemeat

  • 3 tbsp.

    wholegrain mustard, plus 2tsp

  • 1 tbsp.

    finely chopped thyme leaves

  • 100 g

    (3 ½oz) gruyere

  • 2

    demi baguettes

Directions

  1. Heat 1tbsp oil in a large frying pan, and fry the onion for 10min until soft. Add the sausage meat for 5min until turning golden, breaking it up with a spoon as it cooks. Stir in the 2tbsp mustard and the thyme leaves. Tip into a bowl and set aside to cool for 10min.

  2. Preheat oven to 180°C (160°C fan) mark 4. Cut the ends off the baguettes, use a long knife to cut out a central hole in the baguette (leave about 1.5cm-2cm/ 3/4in of the crust and bread border).

  3. Grate half the Gruyere and chop the remaining half into cubes, add to the sausagemeat mixture and stir well.
