Preheat oven to 180°C (160°C fan) mark 4. Cut the ends off the baguettes, use a long knife to cut out a central hole in the baguette (leave about 1.5cm-2cm/ 3/4in of the crust and bread border).
Grate half the Gruyere and chop the remaining half into cubes, add to the sausagemeat mixture and stir well.

Divide the sausage mixture into two and stuff the baguettes, making sure to push down into the middle of the baguettes. Mix the remaining oil and mustard in a bowl and brush over the baguettes.
