Seasoned sausage meat and melted gruyere cheese stuffed inside a freshly-baked baguette is just what we want to eat this weekend. The addition of wholegrain mustard brings a hit of peppery heat, but feel free to add extra rocket and drizzle with smokey tomato ketchup, BBQ sauce, or our cranberry and red onion marmalade.

onion, finely sliced
(14oz) pack sausagemeat
wholegrain mustard, plus 2tsp
finely chopped thyme leaves
(3 ½oz) gruyere
demi baguettes
Sauces to serve
Heat 1tbsp oil in a large frying pan, and fry the onion for 10min until soft. Add the sausage meat for 5min until turning golden, breaking it up with a spoon as it cooks. Stir in the 2tbsp mustard and the thyme leaves. Tip into a bowl and set aside to cool for 10min.
Preheat oven to 180°C (160°C fan) mark 4. Cut the ends off the baguettes, use a long knife to cut out a central hole in the baguette (leave about 1.5cm-2cm/ 3/4in of the crust and bread border).
Grate half the Gruyere and chop the remaining half into cubes, add to the sausagemeat mixture and stir well.

Divide the sausage mixture into two and stuff the baguettes, making sure to push down into the middle of the baguettes. Mix the remaining oil and mustard in a bowl and brush over the baguettes. Place on a baking sheet and bake in the oven 20min until the baguette is crispy and the filling is hot. Slice and serve with mustard, ketchup, or BBQ sauce.
