I’m not fussy about the recipe, and I tend to change it a little every time, but I am fussy about the bowl in which I make it. The way I see it, a mixing bowl is a workspace, not a storage container. I like to have room to move when I make a salad and I don’t like an unwieldy bowl—what’s best here is a light, wide, unbreakable metal bowl that isn’t too deep. 2 to 3 tablespoons olive oil

¾ cup cilantro, roughly chopped

½ cup crumbled feta
