,300. This is (in millions) the number of ice consumed in catering in France in one year, according to a study by NPD Group. France is the second most fond of these desserts, after Italy, which tastes 520 million each year. French consumption out of home is however in fall of 15% compared to 2019 due to the drop in attendance at restaurants since the health crisis. The pandemic has transformed the mode of purchase of ice: 60% of them are now sold to take away, only 33% are tasted on site. If, before the covid, 1% of the ice was delivered, this share reaches 10% today.
