Ingredients

  • 2 pounds baby Yukon gold potatoes quartered
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried parsley

  • 4 strips bacon finely chopped (or ¼ cup real bacon bits)
